Peanut Butter Waffles


I found this recipe in the recipe booklet that came with my Cuisinart Waffle Stick Maker. Peanut butter anything sticks out to me. These are so good - sweet and fulfilling. I used Trader Joe's Crunchy Peanut Butter with Flax Seeds, which gave them an extra little crunch.

6 T brown sugar
1 1/2 C flour
2 1/4 t baking powder
3/4 t salt
9 T peanut butter
1/3 C butter, melted
1 1/2 C lowfat milk
2 large eggs
1 large egg white

Crumble the brown sugar to remove any lumps and place in a medium bowl with flour, baking powder, and salt. Stir to blend. Place peanut butter and butter in a second bowl and stir until smooth and creamy. Add milk, egg and egg white; stir until smooth. Stir liquid mixture into dry mixture and whisk until smooth. Let batter rest 5 minutes before using. Preheat your waffle iron and cook.

Could be served with syrup, jam, or warm chocolate sauce (hello!). Makes 8 servings.

I also made a knock-off Strawberry Shortcake Jamba Juice at home to go with them. I think I have got the recipe pinned. Here is what I threw in the blender (I'm not putting measurements...you can just kinda guess on amounts for these):

Soy milk
Frozen strawberries
Frozen pineapple
Crushed ice
Agave sweetener (could use sugar or honey)

Blend.

This breakfast was so good, we were all pretty giddy.

  7. oooh, those look good. Sean loves waffles and pancakes with peanut butter on top....he will LOVE these. Thanks for sharing!


    You know if you grind up your flax you can replace the egg and butter in your recipe (1 T flax with 3 T water = 1 egg or 1/2 cup-ish butter). You think it would be not as yummy, but I've liked EVERYTHING better with the flax minus eggs and butter. It makes them so fluffy and light.

    Its hard/almost impossible for your body to digest the flax seed and all its nutrients unless its ground anyways....or you chew the seeds to a pulp.
